Low Carb Meal Idea

If you follow my Snapchat (@simplyeseeri) you know that I enjoy cooking. One of my favourite meals to date is simple to prepare, healthy and packed with flavour. It’s perfect to make during the week because it doesn’t require a lot of cooking skills or time to make.
All you need is 3 main ingredients; shrimp, wild cape hake fillet fish and a vegetable mix of your choice. Note, that you can choose to eat any fish that you enjoy; this meal also goes well with salmon.

Ingredients:
Shrimp (about 6)
Wild cape hake fish (1 fillet)
Minced garlic (2 cloves)
Minced basil (fresh or dried)
Vegetable mix of your choice (I chose zucchini, mushrooms, yellow peppers and spinach)
Olive oil (2 tablespoons)
Seafood seasoning (I used Cool Runnings Seafood Seasoning)
Salt
Pepper

Directions:
1. Clean and shell shrimp
2. Season shrimp and wild cape hake fillet fish for 30 minutes with seafood seasoning of your choice
3. Preheat oven to 350 degrees
4. Once the oven is heated to temperature, bake the seasoned shrimp and fish till cooked all the way through
5. In a saucepan heat up olive oil and sauté garlic till translucent. Sprinkle in basil, add in vegetables of your choice and spinach and cook till done. Sprinkle fresh cracked pepper, a pinch of salt and mix
6. Plate, serve and enjoy!
